Nic Bowen, Chief Winemaker

Nic Bowen joined the Howard Park winemaking team for the 2021 vintage.

Born in the Great Southern region into a winemaking family, he was for a time a professional triathlete, before completing a commerce degree and working in financial planning. However this path wasn’t for him.

Working vintage in Bordeaux and the South of France made Nic appreciate the cultural interaction of wine, people, food and place and returning to Australia he went back to university to gain a degree in winemaking and pursue a career in the industry. He landed a coveted role at Hardys in South Australia, making wines for Tintara and working closely with sparkling wine master Ed Carr at House of Arras.

Nic enjoys the combination of artistry and blending and understanding what each parcel of fruit brings to the palate of the wine. He has a particular passion for sparkling wine and is excited about the possibilities of the Jeté range. He’s looking to experiment with yeasting rates, ageing and oak use and building more layers of complexity into those wines.

Mark Bailey, Senior Winemaker

With a background in hospitality in Australia and UK, Mark worked vintage in  France before becoming a cellarhand at Houghton Wines in the Swan Valley.

After studying winemaking at Charles Sturt University, Mark moved to Margaret River in 2006 to feed his desire to make top quality Chardonnay and Cabernet, joining the Howard Park team initially as Senior Cellarhand, progressing to Assistant Winemaker and becoming Senior Winemaker in 2015.

Stephen Kirby, Chief Viticulturist

Since beginning his viticulture career in his home state of South Australia at Berri Estate, the largest winery in the Southern Hemisphere, Steve’s career has taken him to many of the country’s finest vineyards, working in both regional Victoria and Tasmania. For the last 11 years, Steve has become embedded in the South West wine scene, working as the Margaret River Viticulturist for Accolade Wines based at the highly acclaimed Brookland Valley.

Over the years, Steve has contributed to wine industry research initiatives through both the Riverland and WA vine improvement committees. Much of Steve’s research has been focussed on increasing the industry’s understanding of varietal mixes and clone selections in Australian vineyards.

In 2023, Steve was awarded the Margaret River Wine Association’s Viticulture and Sustainability Excellence Award.

Giacomo Polvara, Winemaker

Originally from Lake Como, Italy, Giacomo Polvara has spent over 15 years in the wine industry, including 10 years in winemaking across Italy and Australia. He studied winemaking at the University of Milan before moving to Margaret River — initially for six months, but instantly fell in love with the region. Giacomo joined Howard Park in 2021 as Assistant Winemaker and was promoted to Winemaker in 2022.

With experience across the Fogarty Wine Group, the Adelaide Hills and nine vintages in Margaret River, Giacomo brings a global perspective and a deep passion for the connection between wine, food and people. His winemaking is driven by his family traditions, sense of place and the joy of sharing.

Andrea Tomasi, Winemaker

Originally from Vicenza, northeastern Italy, Andrea has spent decades travelling the world to learn and refine his craft as a winemaker. His passion for viticulture began in his grandmother’s orchard and was encouraged by his father’s own deep love of collecting and sharing wine.

Andrea studied Viticulture and Winemaking at the Edmund Mach Foundation in Trentino-Alto Adige, completing multiple vintages across Italy before expanding his experience internationally.

Thanks to his admiration for Margaret River Chardonnay Andrea moved to the region where he began at Howard Park as a Vintage Assistant Winemaker, contributing across the 2022–2025 vintages while continuing to complete Northern Hemisphere harvests. In 2025, his role as a winemaker was made permanent.

His approach to winemaking is shaped by diverse regional experience, a respect for tradition, and a strong focus on expressing site and variety.
