Technical Notes
Early harvest of grapes from our vineyards located in the cool climate sub region of Mount Barker ensures we maintain fine and linear acidity and capture delicate fruit flavours, important for the production of premium quality sparkling wine. The grapes were hand harvested and only the finest free run juice is retained for the base wine fermentations which occur in both stainless steel and older French oak. In order to build complexity in the base wines, portions of each blend undergo malolactic fermentation. The Jeté Sparkling White NV was blended and tiraged in July and spent 18 months on lees before being disgorged. In style, the wine is 'brut' with residual sugar levels of approximately 8 grams per litre.
Tasting Notes
This wine is a non-vintage blend of chardonnay and pinot noir with notes of citrus, brioche and baked apple. The rich and complex flavours of the palate are balanced by gentle, savoury lemon freshness. The Jeté Sparkling White NV is an apertif style best enjoyed young with friends, food and lively conversation.
Food Ideas
Slightly lighter style foods suit best, such as egg or mushroom based dishes, hard cheeses, pasta or risotto, vegetables, fish and seafood. Also, compliments well with sushi, oysters and goat's cheese.
