Technical Notes
Early harvest of grapes from our vineyards located in the cool climate sub region of Mount Barker ensures we maintain fine and linear acidity and capture delicate fruit flavours, important for the production of premium quality sparkling wine. The grapes were hand harvested and only the finest free run juice is retained for the base wine fermentations which occur in both stainless steel and older French oak. In order to build complexity in the base wines, portions of each blend undergo malolactic fermentation.
The Jeté Sparkling Rosé NV was blended and tiraged in July and spent 18 months on lees before being disgorged. In style, this wine is 'brut' with residual sugar levels of approximately 8 grams per litre.
Tasting Notes
Bright salmon-pink in colour. This wine is a non-vintage blend of pinot noir and chardonnay with notes of wild strawberry and freshly baked pastry. The palate has a delicate balance of red berries, fine acidity and a rich, creamy texture. The Jeté Sparkling Rosé NV is an apertif style best enjoyed young with friends, food and lively conversation.
Food Ideas
Sweet dishes based on berries, or flavoured with tomato. Seafood compliments well, including prawns and lobster, or slightly pinker style meats including lamb, ham and game.
