1991 Howard Park Cabernet Sauvignon Merlot Tasting Notes

Composition: 85% Cabernet Sauvignon, 10% Merlot, 5% Cabernet Franc

Technical Notes:

Introduction of highly aromatic Cabernet Franc to the blend. Extended skin contact post fermentation 25 days. Maturation in 100% new French oak barriques (Seguin-Moreay) for 24 months.

Tasting Notes:

Great density of colour, bricky red hue, brilliant clarity. This wine demonstrates amazing youth and vitality on the nose still displaying primary fruit aromas; dark cherry and cassis with Black Forest cake chocolate characters. Some forest floor and smokey characters derived from wine maturation make this a complex and multi faceted wine on the nose. The palate has great depth of fruit concentration with youthful vitality belying the wines age. The palate is lively and fresh with sweet berry fruits mid palate and a complex, mature tannin profile of great textural complexity.

Cellaring Notes:

Best after 7-10 years. With correct cellaring should have extended life of at least 25 years.
